How We Prepare Gluten-Free Pasta in Hell's Kitchen

Universal Sauce Compatibility

Because our Roman sauces (Carbonara, Cacio & Pepe, 1900s Alfredo, Vongole, Pomodoro, Bolognese) are thickened by cheese emulsion or slow reduction—never wheat flour—any pasta sauce on our menu can be prepared gluten-free.

Cooked Fresh to Order

When you request gluten-free pasta for dine-in, pickup, or 2-mile Manhattan delivery, our kitchen boils a fresh batch to al dente perfection and tosses it in a clean pan.

Naturally Gluten-Free Secondi

Beyond pasta, our Mediterranean salads and select protein courses provide naturally gluten-free dining just steps from the Theater District.

FREQUENTLY ASKED QUESTIONS

Dining & Ordering Guide.

Can I get gluten-free pasta with Carbonara, Cacio e Pepe, or Fettuccine Alfredo?

Yes. Every pasta sauce at Pasta Eater Hell's Kitchen—including our 1900s Alfredo Trilogy, Carbonara, Cacio e Pepe, and Linguine alle Vongole—can be paired with our gluten-free pasta substitution upon request.

Do you use flour or roux to thicken your Roman pasta sauces?

No. Authentic Roman sauces never use wheat flour or roux as a thickener. Our sauces rely on aged Pecorino Romano, 24-month Parmigiano Reggiano, extra virgin olive oil, or slow-simmered San Marzano tomatoes.
