0% Heavy Cream Policy

Our Carbonara, Cacio & Pepe, Amatriciana, and 1900s Alfredo Trilogy never use heavy cream. Creaminess comes strictly from emulsifying finely grated DOP cheeses, egg yolks or sweet butter with starchy bronze-die pasta water.

Bronze-Die Daily Extrusion

We extrude our pasta in-house every morning in Hell's Kitchen so the porous surface grips every drop of Pecorino Romano and guanciale emulsion.

5-Minute Broadway Proximity

Located between W 50th & W 51st St on 9th Ave, we serve authentic Roman pasta in 40–45 minutes dine-in or 10–15 minutes express pickup before theater curtains.

FREQUENTLY ASKED QUESTIONS

Dining & Ordering Guide.

Do you put heavy cream in your Carbonara or Fettuccine Alfredo?

Never. Both our Roman Carbonara and our 1900s Alfredo Trilogy are prepared with 0% heavy cream. Carbonara is emulsified with egg yolks, aged Pecorino Romano DOP, and crispy guanciale; our Alfredo follows Alfredo Di Lelio's early 1900s Rome recipe using only fresh egg fettuccine, sweet cream butter, and 24-month Parmigiano Reggiano.

Are your Roman Classics available all year round?

Yes. While our seasonal menu rotates every 90 days, our core Roman Classics and the 1900s Alfredo Trilogy are permanent year-round pillars at 744 9th Ave.
